I don't know when this crazy obsession for meal planning started, but one thing I do know is that it has worked for us the past ten years and it's about time I share my tips and tricks!


First things first, it’s all about the planning! I take my “menu ideas” list {the link is found on the sidebar to your right}, and plan out my entire month in advance on our calendar in the kitchen. What works best for us is the following:


Sundays = a nice meal

Mondays = chicken

Tuesdays = soup/pasta

Wednesdays = beef

Thursdays = fish

Fridays = Date Nights {i.e. no cooking}!

Saturdays = misc

This way we rotate meals so we aren’t stuck in a rut. I then take my “grocery list” {the link is found on the sidebar to your right} and make my shopping list for the next 2 weeks. Remember, initially this takes more time in the beginning, but then your entire month is planned and you won’t have to figure out what’s for dinner plus I promise it saves money on your grocery bill!

Green Chili Burritos

Okay, we have to say...these are amazing and we have Deneigh’s mom to thank for the 3 dozen burritos in our freezer right now!  What we love about making these is it makes so many.  We always have a quick meal just in case, or a filling lunch!  Remember, this can slow cook for  the day, but it takes an hour or so to make and wrap them.





















Green Chili Burritos


1 big pkg cubed beef {Sam’s Club or Costco}

1 big pkg pork tenderloin {Sam’s Club or Costco}

1 big can of Original Rotel

1 onion

1 lb green chili

1 tbls minced garlic

2 big cans of refried beans


Cut cubed beef in half again, and then cube pork the same size.  Add all ingredients to the crockpot except the refried beans.  Slow cook for 6-8 hours.  Add refried beans.


Making the burritos:


We use the regular size of flour tortillas.  Our only secret is SHARP cheese!  It just makes them taste amazing!  When making the burritos you sprinkle a little cheese on the tortilla first, then add a heaping spoonful of the filling, then add more cheese {to your liking}.  Wrap the tortilla up and then wrap tightly in tin foil.  Place 6-8 burritos into a gallon size freezer bag and freeze!

I just came across your fun blog, I hope you don't mind...I think I remember eating these burritos forever ago on a boat trip with the Nielsons. I can't wait to make them! Thanks for sharing.
