Hudspud
Cook and set aside 1 lb (or a tube) of spicy pork sausage.
8 russet potatoes, peeled and cubed
4 carrots, peeled and cubed
1 onion, diced
Cover with water and boil until vegetables are very tender (mashable).
Add:
1 bag of baby spinach
Cook for 5 more minutes. Drain in a strainer. Put everything back in the pot and add a stick of butter, a dollop of sour cream, pepper, and garlic salt to taste. Use a beater to mix all the vegetables. Then stir in the sausage. Put in a 13x9 glass dish. Sometimes we top it with cheese. We usually serve this with fresh homemade bread and something fruity.
